Alentejo Olive Oil is oil extracted between the months of October and February from traditional varieties of olives – mainly Galega, Cordovil de Serpa, Verdeal or Cobrançosa – grown in the olive groves of the Alentejo region. The olives are harvested when perfectly ripe to obtain fruity and smooth olive oils, which are processed using mechanical methods. The “Alentejo Olive Oil” has the following organoleptic qualities: Olive oils of a fruity aroma, with little or no bitterness, and little or no spiciness, with dominant flavours of apple, nuts, tomato, herbs or leaves.
